The grapes were harvested by variety and in blocks, fully destemmed and crushed. The must was lightly pressed and decanted to achieve the required clarity, followed by fermentation at a controlled temperature between 13ºC and 14ºC in vats for about 3 weeks to enhance aromatic expression.
