EncruzadoEncruzado is Dão’s top variety and reveals in a unique way the legendary elegance of the region’s wines. The harvest is manual and collected in 12kg boxes. The winemaking occurs during long pre-fermentative maceration, followed by light pressing. Next the must is led to a natural decanting process, and the fermentation occurs slowly in used 600-litre French oak casks. In the wine ageing process the battonage is made in a traditional cement tank and a small percentage in casks.
