Experts' AssessmentVinification and Ageing
Cold maceration for about 3 days, static settling in steel and spontaneous fermentation in concrete at 17-18 °C for about 20 days. Around 20% is fermented in 1000 L oak barrels. Ageing on fine lees for 6 months, followed by 6 months in steel and 2 months in bottle.
