Experts' AssessmentVinification and Ageing
Cold maceration for about 3 days, static settling in steel and spontaneous fermentation in concrete at 17-18 °C for about 20 days. Around 20% is fermented in 1000 L oak barrels. Ageing on fine lees for 6 months, followed by 6 months in steel and 2 months in bottle.

Founded in 1761, Borgogno is one of Piedmont's most revered and oldest wineries, guardian of the purest and most majestic tradition of Barolo wines. ● Located in the historic heart of the Barolo village, Giacomo Borgogno & Figli is a living monument to classic Italian viticulture. The producer maintains artisanal practices, such as long fermentation with indigenous yeasts and patient aging in large Slavonian oak casks. This traditionalist approach results in Nebbiolo wines of aristocratic longevity.
