Vinification and Ageing

Produced using the traditional Solera and Criadera system in Jerez. This Amontillado benefited from a dual aging process: an initial biological phase under a veil of flor, followed by a period of oxidative aging in American oak casks. This secular method ensures flavor concentration and perfect component integration, resulting in a structured wine with great character.

Terroir

Sourced from the albariza soils of Jerez de la Frontera, characterized by high limestone content and moisture retention capacity. This unique terroir, combined with the influence of the Levante and Poniente winds, provides ideal conditions for the cultivation of the Palomino grape and the natural development of the veil of flor, essential to this wine's identity.

This bottle is a historic example of the sherry trade in the mid-20th century, having been imported into Portugal by the prestigious Graham's House. It has an acceptable fill level for its age and natural signs of ageing on the label, which give it a strong visual identity. Due to its oxidative nature, Amontillado is one of the most stable styles of wine over time, retaining its flavour profile even after decades of storage. This bottle originates from our private cellar and may present natural signs of ageing consistent with long-term storage. These wines are released as rare, individual pieces and should be understood as such. Due to their age, older wines and spirits can display evolved, atypical, or fragile characteristics. While many offer unique and rewarding experiences, their condition cannot be guaranteed in the same way as current-release wines. Variations in aroma, flavour, and overall performance are part of the nature of mature bottles. These products are recommended for: - experienced wine enthusiasts - collectors - customers with an understanding of aged wines and their variability They are not intended for those seeking a predictable or standard tasting profile.
