Palomino, or Palomino Fino, is the absolute white grape of the Jerez region, responsible for Spain’s most distinct and prestigious fortified wines. This grape is prized for its ability to express the chalky ‘albariza’ terroir and for being the perfect vehicle for biological and oxidative aging in solera. In the glass, it reveals itself as a dry, mineral, and saline wine, with aromas reminiscent of almonds, apple, and sea spray. It is a variety that prizes winemaking technique and the soul of Jerez, resulting in wines of infinite complexity.
