This wine is the result of a meticulous selection process in the vineyard and at the winery’s sorting table, and of a delicate winemaking process with maceration taken to the limit, where every detail is taken into account to produce a complex, refined and elegant wine. The wine is aged in French oak barrels for a period of 20 to 22 months, displaying a deep, rich colour, with great intensity and aromatic complexity. On the palate, it has great breadth and precision; austere, with subtle black fruit, strongly focused on minerality, it displays great structure with velvety tannins and a seductive freshness. All this comes together in a long and very persistent finish, ensuring a long life in the bottle and great ageing potential. The harvest began on 19 August, earlier than usual, in order to maintain high acidity levels and avoid high alcohol content. The year was more productive, with yields up by around 25 per cent compared to the previous year. The decision to start harvesting earlier proved to be the right one, as the main vineyards had been harvested before heavy rain began on 27 September. Following careful selection, both in the vineyard and in the winery, fermentation took place in truncated-conical stainless steel vats and wooden casks, with maceration lasting around 60 days. It was then aged for 22 months in French oak barrels, 25 per cent of which were new, where malolactic fermentation took place.
