Grapes were hand-harvested into 20 kg boxes at their ideal point of maturation. After gentle crushing and total destemming, fermentation took place in temperature-controlled stainless steel vats. The prolonged aging occurred in wooden casks, where the final blend was carefully selected to ensure the complexity and balance typical of a 10-year-old Tawny.
