Vinification and Ageing

Manual harvest in September with transport in 22 kg boxes. After 12 hours in a cold room, the grapes are destemmed, partially crushed, and gravity-fed into granite lagares, where full alcoholic fermentation takes place with traditional foot treading. Malolactic fermentation and 20 months of aging occur in used 225L barrels.

Terroir

Produced from vineyards located in the prestigious Cima Corgo sub-region, in the heart of the Douro. The schist soils and unique microclimate enhance the development of the Tinto Cão grape, allowing it to retain its characteristic natural acidity and wild aromatic profile.
