Fino Palomino, or simply Palomino Fino, is the sovereign grape of the Jerez triangle in Spain, serving as the foundation for the world-famous Sherry wines. This white grape is prized for its neutrality, allowing it to be the perfect vessel for developing the complex yeast notes and biological oxidation of the solera system. In the glass, it translates into dry wines with a unique saline minerality and aromas reminiscent of almonds and sea spray. It is a variety that celebrates winemaking technique and the soul of the calcareous albariza soil.
