In its constant search for top quality wines, Adega Cartuxa produced its first DOC Alentejo - Évora sparkling wine in 2007 from the Arinto grape variety. It was made by the Classic Method, resulting in a fresh and elegant wine.
The wines take their name from the Carthusian monks, who since 1598 have lived a life of solitude and prayer in the Monastery of Santa Maria Scala Coeli. The wines are a blend of Antão Vaz, Roupeiro and Arinto grape varieties, persistent and harmonious, showing a delicate aroma and medium body.

It has aromas of red fruit jams, complexed by wood. It is velvety, presenting an excellent structure and soft tannins. Serve between 16º and 18ºC.
It has aromas of tropical fruits, and spices with vanilla enhancement. It is velvety and unctuous, with a balanced acidity and silky soft tannins. Serve between 7º and 9ºC.
Taste, hints of tropical aromas, associated with the lush freshness of green tea. A great mouth feel lends the wine a sense of elegance, the silky tannins of Hungarian oak merge with the sweet and tropical notes of grape varieties. Serve at 10ºC, with smoked fish dishes and Partridge in vinegar sauce.
Taste, elegant, complex and aromatic, associated to a marked structure, high persistency and longevity. Serve between 16 e 18ºC, with well-seasoned red meats or meats with strong flavours such as hunting. Also follows very well with strong cheeses.

Vinified from Aragonez, Trincadeira and Castelão in optimal ripening conditions using the most modern technology. Presents a clear and crystalline aspect of living pink color. Is characterized by fruity aroma with notes of cherries and fresh red fruit, an elegantly balanced set and a lingering finish. (The vintage may differ from photo).
Beautiful dark ruby colour. Very complexed mix of riped raspberries and blackberries. Rich and spicy with red berries flavour, very elegant with silky tannins and very long finish.
Beautiful golden and lemon-green colour. Well integrated light French oak, with mango, orange and pear aromas. Quite silky, showing a very good balance and structure. Very nice acidity and persistent finish.
This wine, vinified with selected grapes from oldvines, is fermented in ancient marble “lagares”, using the tradicional foot-treading method.
