  • Cognac,

Cognac is a brandy (distilled from fruit) resulting from the distillation of wine. Like Champagne, an exclusive sparkling wine from the Champagne region, it should only be called Cognac if it were the wine brandy produced in the region that gave it its name. But unlike Champagne, the term Cognac continues to be used by several brands that do not produce the drink in the homonymous region. The biggest houses producing the drink are Remy Martin, Martell, Henessy and Courvoisier. Cognac can be produced in three styles: Without aging, a typical case of fruit cognacs, which have a clear hue; Single barrel, cognacs with golden/caramel hue, aged in oak barrels; Solera, some cognacs are aged in the sill system, especially the Spanish. The Cognac Aging Classification has 3 classificatory bases: V.S (Very Special) or ☆☆☆ (Three Stars) Standard Cognac, minimum 2 years of aging in oak barrels; V.S.O.P. - (Very Special Old Pale) Minimum of 4 years of aging; X.O. - (Old Extra) Minimum 10 years.

  • Whisky,

In general, Whisky is a beverage distilled from malt fermentation. Malt is any grain that germinated and then dried. There are 4 main differences between the types of whisky: the grain used, the production process, the origin of manufacture and the maturation time. The first evidence of distillation in Scotland dates from the 15th century and the first whiskey was a drink widely used as a medicine in the treatment of various diseases. Originally produced by monks, whisky production went to Scottish homes and farms after the closure of monasteries ordered by King Henry VII. Time passed and the whisky production process was refined, making the drink practically a "staple food" in Scotland.

Summary of Whisky Types - Scotch Whisky: To be considered a Scotch whisky, the drink must be made in Scotland, with malted barley or grains and aged in oak barrels for at least 3 years; Irish Whisky: More fruity and slightly peppery, they are made from a mixture of non-smoked and toasted barley and are triple distilled, making them softer; Japanese Whisky: In less than a century of history (since 1920), Japanese whisky has managed to surpass traditional manufacturers and, in 2014, it was considered the best whisky in the world. Produced in a similar way to Scotch whisky, the whiskies from the Yamazaki distillery undergo a more prolonged fermentation process and their maturation also goes through Japanese oak barrels; American whiskies: American whiskies are divided into three main categories, Bourbon, Tennessee and Rye (which is also produced in Canada). In the first category, there are 3 different varieties: Bourbon (made from malted grains, at least 51% of which must be corn), Straight Bourbon (aged at least two years and without additives, such as flavors or dyes) Blended Bourbon (which can be include other alcoholic beverages and flavors). Tennessee has a production method identical to Bourbon, the difference is in the filtering process in a kind of molasses, adding an even sweeter flavor. Rye whisky, with a spicy and fruity flavor, which makes it perfect for cocktails, has the same production rule as Bourbon, but the recipe takes at least 51% of rye. Canadian Rye, on the other hand, may contain much less than 51% of rye and there are no restrictions on the mix of grains used in their production, as long as the final flavor maintains its fruity and peppery characteristics.

  • Gin,

If you like a good drink to relax during a meeting with family or friends, or to relax after a long day at work, you probably have heard of Gin, the most recent bartender’s favorite. Despite being considered one of the oldest spirits manufactured by man, Gin has reappeared on the drink menus of bars and restaurants around the world as the favorite option for those who want to taste something classic, but different.

The first recipe for the drink, created in the 17th century in the Netherlands, was developed to be an alternative formula to diuretic drugs, used to treat kidney diseases. The main ingredient, juniper, is a fruit known for its benefits to the kidney system but which, in the form of medicine, has not resulted in great benefits for patients.

The aromatic flavor of Gin has won many tastes, allowing its popularization as an alcoholic beverage. Even though it was created in Holland, Gin only became popular when it arrived in England and gained more quality in its production. The English were responsible for creating the best combinations of the drink we know today, with characteristic flavors and aromas. As they are tasty and striking, the challenge of finding a good cocktail with Gin has become as exciting as having a good beer or glass of wine.

  • Vodka,

Vodka is present in most good cocktails, because it is super versatile, whether for cocktails in general, caipirinhas and even pure for the most courageous. The drink became popular in the 70s, when many bartenders started to make mixes and cocktails with vodka. After that, it became one of the most consumed drinks by young audiences to date. In countries with very low temperatures, such as Russia (land of vodka) it is very common to be eaten pure and the ideal is to have options at room temperature, cold and with ice cubes. But with its versatility, in other countries, the most normal is to be used for mixtures, especially with energy drinks, soft drinks or liqueurs/syrups, it can also be a good option for those who do not like to consume the pure drink.

There are 3 main different types of vodka, which are classified as: Western - pure and clear, has a neutral aroma and a clean alcohol flavor, usually very mild; Polish - it is characterized by purity, more pronounced flavor and aroma; Russian - Russians don't play, so vodkas have a strong flavor, but still, they are very pleasant to drink.

  • Rum,

Rum is a distilled alcoholic beverage made from sugarcane by products, such as molasses, or directly from sugarcane juice, by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak barrels. Rum can be referred to in Spanish by descriptors such as Ron Viejo (old rum) and ron añejo (aged rum).
Light Rums are commonly used in cocktails, whereas “golden” and “dark” rums were typically consumed individually “straight” or “neat” or used for cooking, but are now commonly consumed with mixers. Premium Rums are also available, made to be consumed either straight or iced.

  • Tequila,

Tequila (Spanish [teˈkila]) is a regional specific name for a distilled beverage made from the blue agave plant, primarily in the area surrounding the city of Tequila, 65 km (40 mi) northwest of Guadalajara, and in the highlands (Los Altos) of the central western Mexican state of Jalisco. Although tequila is similar to mezcal, modern tequila differs somewhat in the method of its production, in the use of only blue agave plants, as well as in its regional specificity.
Tequila is most often made at a 38–40% alcohol content (76–80 U.S. proof), but can be produced between 31 and 55% alcohol content (62 and 110 U.S. proof).

  • Brandy,

Brandy is a spirit made by distilling wine or fermented fruit juice, yielding a versatile drink with rich historical roots. Originating in regions where wine production was prevalent, brandy became popular due to its preservation qualities and warming character, making it a favorite in colder climates.

Brandy production involves distilling fermented grape or fruit juices, resulting in a clear spirit often aged in oak barrels, which imparts a golden hue and complex flavors. The aging process varies, with common classifications being V.S. (Very Special) with a minimum of two years, V.S.O.P. (Very Special Old Pale) with at least four years, and X.O. (Extra Old) aged ten years or more.

There are various styles of brandy worldwide, including Cognac and Armagnac from France, made specifically in their respective regions, and Spanish brandies from Jerez. Each has unique characteristics due to regional practices, grape varieties, and aging methods. Brandy can be enjoyed neat, in cocktails, or as a culinary ingredient, and its diversity makes it suitable for many occasions, offering flavors ranging from fruit-forward to deeply oaky and caramelized.

Foz Gourmet offers a curated selection of premium brandies, chosen for quality and crafted to enhance your understanding and enjoyment of this distinguished spirit.
