Flor de S. José Reserva White Douro DOC 2015. Old vines with predominantly Rabigato and Gouveio
Higher areas of the Douro, with an altitude between 450 and 500 meters, allowing a good temperature range. These conditions are extremely important to mature slowly in order to preserve the flavors of the grapes variety, its freshness and acidity.
Grapes are harvested by variety and plots in boxes of 20Kg, and put in cold at 5/6ºC. After fully stalked, they are crushed. The must was subtly pressed and decanted until necessary limpidity. Fermentation and subsequent ageing in barrels of 500 liters, 60% new and 40% used. Every month all the lees were removed to keep them in. After eight months the final blend was made and the wine is submitted to a fining before being bottled.

Should be served chilled at a temperature of 12/14ºC, and accompanying spicy fish dishes. Keep in a dry place with a fresh and constant temperature. The bottle should be stored horizontally.
