It presents itself with a limpid, straw yellow colour, the bubble is thin and the string of foam is very persistent, the aroma is rich and intense, dominated by nuances of La Reine toothpick biscuits, quince and peach jam, citrus skin, pineapple and linden flower. It has a round full feel on the mouth, a well integrated acidity, is well balanced and elegant. The gustatory persistence is very good and the mousse is soft and well integrated.

The base wine was vinified by open waterspout, with direct pressing of the grapes in vacuum squeezer and clarification of the must by static sedimentation. The fermentation of the wine occurred mainly in stainless steel vats and about 25% in oak barrels, both at controlled temperature. The sparkling wine was obtained by the classic method, with re-fermentation in cellar at 14 ºC and maturation over lees of 26 months, at the minimum. After dégorgement, the minimum maturation period before commercialization is 3 months.
