For the “BUBBLY BRUT” we pick our Chardonnay & Pinot Noir grapes exclusively in the high mountain plots. Following the first fermentation in small stainless steel tanks and tonneaux barrel, the wines undergo a secondary fermentation in the bottle and are left to age “sur lie” for nine months.
