Given the adopted concept, the wine is not according to the fashion trend, where oak notes and concentration are mandatory. It shows, therefore, some “bad temper” in the aroma subtlety and in the effect on the most sensitive palates, although it fills with joy those appreciating the style. It is a wine that “tastes more than smells” and so with a great aging potential and gastronomic aptitude. It agrees with the rule “the older the better”, at least in the next 20 years, although the initial “bad temper” will be lost during bottle aging. Pour at 16 ºC, to attain its plenitude after 15 min, when temperature increases a bit and wine breathes. Decantation is an option but does not allow to observe the surprising evolution in the glass.
