Very austere aroma, with slight mineral notes. In the mouth it is aggressive for the most sensitive palates and hard to understand by those appreciating easy white wines. However this is not a defect but a (bad) temper. With time the bad temper fades and a beauty arises from it character. It is a wine that “tastes more than smells” and so with a great aging potential and gastronomic aptitude. It agrees with the rule “the older the better”, at least in the next 15 years. Pour at 12º C, to attain its plenitude after 30 min, when the temperature rises a little and the wine breathes. Decantation is an option but does not enable to enjoy the surprising evolution in the glass.
