Manual harvest only, carried out by successive tries (2 to 6 tries) of botrytised grapes. A minimum potential degree of 20° is required to start the harvest. Fermentation, one-third in new barrels, one-third in 1-wine barrels, one-third in two-wine barrels, lasting from three weeks to two months. Aging on thin lees, carried out in barrels lasting from 18 to 24 months according to the vintages with racking every three months.
